Tex-Mex Sloppy Joes

Elaura called these "adult" sloppy joes. :biggrin:

Makes about 8 servings.

2 lbs ground meat (I use 80/20)
1 14.5 oz can reduced sodium beef broth*
Bell pepper medley or 1 green and 1 red diced.
Chili powder, pepper, and salt to taste.
2 garlic cloves minced (or 1 tbsp of pre-minced jarred garlic).
1/3 cup ketchup
2/3 cup diced onion (or about 2/3 one medium onion)

In a large skillet, brown the meat and add the chili powder, salt, and pepper. Drain and in the same skillet, sauté the onions, garlic, and peppers until the onion turns slightly brown. Return the meat to the skillet and add the broth and ketchup. Cook until the broth has reduced, stirring occasionally. Serve on hamburger buns and with baked beans and tater tots.

*If you want a thicker sauce, make a beef broth rue: melt 4 tbsp of the meat drippings in a pot and whisk in 1/4 cup of flour. Cook for about 2 minutes, or until you can smell the nuttiness of the flour. Slowly pour in the broth and whisk until incorporated. Cook for about five minutes, whisking frequently, until the broth turns a light brown color. Stir into the mix and cook as above.
