Biscuits and gravy

1 lb breakfast sausage
1/4 cup flour
2 cups milk
Salt and pepper

Cook sausage in a cast iron skillet or saucepan*. Remove sausage and whisk in all of the flour at once, making sure to scrape up the brown bits. Cook and whisk over low heat for 5 minutes. Remove from heat and whisk in the milk a little at a time. Return to medium-high heat and cook, stirring occasionally, until the gravy thickens up (it should coat the back of a wooden spoon). Add seasoning as desired and return sausage to mixture, combining fully. Server over biscuits. Makes about four to five servings.

*You may need to use 2 Tbsp of canola or peanut oil (they're both tasteless) to brown the sausage. Add in oil if there's not enough fat left over for 2 Tbsp and heat before adding the flour.
